Smoky Salmon & Lentil Bowl

Ingredients

  • 1 cup quinoa
  • 1 cup water
  • 0.5 teaspoon salt
  • 0.5 cup cucumber
  • 0.5 cup cherry tomatoes
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh mint
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove (minced)
  • 0.25 teaspoon black pepper
  • 0.25 cup feta cheese (optional)
  • 2 pieces lemon wedges (optional)

Instructions

  1. 1.Rinse quinoa under cold water and drain.
  2. 2.In a medium saucepan, combine quinoa with 1 cup of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3.While quinoa cooks, chop cucumber, cherry tomatoes, and fresh herbs (parsley and mint).
  4. 4.In a large bowl, combine cooked quinoa, chopped vegetables, and herbs.
  5. 5.In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.
  6. 6.Pour the dressing over the quinoa mixture and toss gently to combine.
  7. 7.Serve the quinoa bowl garnished with feta cheese and lemon wedges if desired.
