Ingredients
• 1 rack of lamb (frenched)
• 2 tbsp Dijon mustard
• 3 cloves garlic (minced)
• 2 tbsp olive oil
• 1 tbsp rosemary
• 1 tbsp thyme
• 1 tsp salt
• 1 tsp pepper
• ½ tsp red pepper flakes
Instructions
1.
1. Preheat oven to 425°F.

2. Mix garlic, oil, herbs, salt, pepper, and flakes.
3.
3. Rub lamb with Dijon, then coat with herb mix.
4.
4. Sear in pan (2–3 min per side).
5.
5. Roast 15–20 min (125°F for medium-rare).
6.
6. Rest 10 min, slice between bones.
