Ingredients

  • 2 cups canned chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup plain yogurt
  • 1 tablespoon lemon juice
  • 4 count tortillas
  • 0.5 cup cucumber
  • 0.5 cup tomato
  • 1 cup lettuce

Instructions

  1. 1.Drain and rinse chickpeas well.
  2. 2.In a bowl, mix chickpeas with olive oil, ground cumin, smoked paprika, garlic powder, ground coriander, salt, and pepper.
  3. 3.Heat a skillet over medium heat and cook the chickpeas until slightly crispy and fragrant, about 8-10 minutes, stirring occasionally.
  4. 4.Warm the tortillas in a dry pan or microwave.
  5. 5.In a small bowl, mix plain yogurt with a squeeze of lemon juice and a pinch of salt to make a quick sauce.
  6. 6.Chop cucumber, tomato, and lettuce.
  7. 7.To assemble, spread yogurt sauce on each tortilla, add chickpeas, and top with chopped veggies.
