Ingredients
2 cups canned chickpeas
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
0.5 teaspoon garlic powder
0.5 teaspoon ground coriander
0.5 teaspoon salt
0.25 teaspoon black pepper
0.5 cup plain yogurt
1 tablespoon lemon juice
4 count tortillas
0.5 cup cucumber
0.5 cup tomato
1 cup lettuce
Instructions
1.
Drain and rinse chickpeas well.
2.
In a bowl, mix chickpeas with olive oil, ground cumin, smoked paprika, garlic powder, ground coriander, salt, and pepper.
3.
Heat a skillet over medium heat and cook the chickpeas until slightly crispy and fragrant, about 8-10 minutes, stirring occasionally.
4.
Warm the tortillas in a dry pan or microwave.
5.
In a small bowl, mix plain yogurt with a squeeze of lemon juice and a pinch of salt to make a quick sauce.
6.
Chop cucumber, tomato, and lettuce.
7.
To assemble, spread yogurt sauce on each tortilla, add chickpeas, and top with chopped veggies.
8.
Roll up the tortillas tightly and cut in half if desired. Serve immediately.
