Ingredients
2 boneless, skinless chicken breasts
1 cup jasmine rice
1 ½ cups coconut-lime broth (blend of coconut water + lime zest)
1 tbsp golden citrus seasoning (turmeric, orange peel, garlic powder)
1 tbsp olive oil
½ cup roasted sweet corn
½ cup diced cucumber
¼ cup pickled red onions
1 avocado, sliced
2 tbsp honey-lime drizzle (honey + lime juice + pinch of salt)
1 tbsp fresh chopped cilantro
Salt & pepper to taste
Instructions

Cook the rice

In a saucepan, combine jasmine rice with coconut-lime broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until fluffy.

Season the chicken

Rub chicken breasts with olive oil, golden citrus seasoning, salt, and pepper. Let sit for 10 minutes.

Cook the chicken

Heat a skillet over medium heat and cook chicken for 5–6 minutes per side until golden and fully cooked. Let rest, then slice.

Prepare toppings

While the chicken cooks, dice cucumber, slice avocado, and prepare pickled onions if not pre-made.

Assemble the bowl

Add a base of rice, then layer sliced chicken, corn, cucumber, avocado, and pickled onions.

Finish & serve

Drizzle honey-lime sauce over the bowl and garnish with fresh cilantro.
