Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 pieces garlic cloves
  • 1 cup diced tomatoes
  • 1.5 cups canned chickpeas
  • 0.5 cup Kalamata olives
  • 4 cups fresh spinach
  • 0.5 cup feta cheese
  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. 1.Heat olive oil in a large skillet over medium heat.
  2. 2.Add chopped onion and minced garlic; sauté until softened, about 5 minutes.
  3. 3.Stir in diced tomatoes, drained chickpeas, and sliced Kalamata olives.
  4. 4.Season with salt, black pepper, dried oregano, and smoked paprika.
  5. 5.Bring the mixture to a simmer and cook for 10 minutes, allowing flavors to meld.
