Ingredients
2 tablespoons olive oil
1 medium yellow onion
3 pieces garlic cloves
1 cup diced tomatoes
1.5 cups canned chickpeas
0.5 cup Kalamata olives
4 cups fresh spinach
0.5 cup feta cheese
1 teaspoon dried oregano
0.5 teaspoon smoked paprika
0.75 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons fresh parsley
1 tablespoon lemon juice
Instructions
1.
Heat olive oil in a large skillet over medium heat.

Add chopped onion and minced garlic; sauté until softened, about 5 minutes.

Stir in diced tomatoes, drained chickpeas, and sliced Kalamata olives.
4.
Season with salt, black pepper, dried oregano, and smoked paprika.
5.
Bring the mixture to a simmer and cook for 10 minutes, allowing flavors to meld.
6.
Add fresh spinach and cook until wilted, about 2-3 minutes.
7.
Sprinkle crumbled feta cheese on top and cook another minute until slightly softened.
8.
Remove from heat and garnish with chopped fresh parsley and a squeeze of lemon juice before serving.
