Ingredients
10 oz chicken breast
4 cups mixed salad greens
0.25 cup cilantro, chopped
1 lime, zested and juiced
1 tablespoon olive oil
1 clove garlic, minced
0.5 cup cucumber, diced
0.5 cup cherry tomatoes, halved
0.5 avocado, sliced
salt
black pepper
Instructions
1.
Preheat grill or a grill pan over medium-high heat.
2.
Season chicken breasts with salt, pepper, and half of the lime zest.
3.
Grill chicken for 6-7 minutes per side, or until cooked through. Let rest, then slice thinly.
4.
In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, and pepper to make the dressing.
5.
In a large bowl, combine mixed greens, diced cucumber, cherry tomatoes, sliced avocado, and chopped cilantro.
6.
Add the sliced chicken to the salad and drizzle with the dressing.
7.
Toss gently to coat everything evenly.
8.
Serve immediately, garnishing with remaining lime zest and extra cilantro if desired.
