Ingredients
4 pieces skinless chicken breast
3 tablespoons lemon juice
3 count garlic cloves
2 tablespoons olive oil
3 medium carrots
2 cups broccoli florets
1 medium bell pepper
salt
black pepper
1 teaspoon dried oregano
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix lemon juice, minced garlic, olive oil, salt, pepper, and a pinch of oregano to create the marinade.

Place chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated. Let marinate for 10 minutes.

Chop carrots, broccoli florets, and bell peppers into bite-sized pieces.
5.
Arrange vegetables around the chicken in the baking dish. Drizzle a little olive oil over veggies and season with salt and pepper.
6.
Roast in the oven for 35-40 minutes, or until the chicken is cooked through and vegetables are tender.
7.
Remove from oven and let rest for 5 minutes before serving.
