Cilantro Lime Shrimp Tacos

Ingredients

  • 1.5 pounds shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups shredded green cabbage
  • 0.5 cup fresh cilantro (chopped)
  • 3 tablespoons lime juice
  • 8 pieces corn tortillas
  • 1 avocado (sliced)
  • 0.5 cup Greek yogurt

Instructions

  1. 1.In a bowl, combine peeled and deveined shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Marinate for 15 minutes.
  2. 2.Meanwhile, prepare the cilantro lime slaw by mixing shredded cabbage, chopped cilantro, lime juice, olive oil, salt, and pepper in a bowl.
  3. 3.Heat a large skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until opaque and slightly charred.
  4. 4.Warm the corn tortillas in a dry skillet or microwave.
  5. 5.Assemble the tacos by placing shrimp onto each tortilla, top with a generous scoop of cilantro lime slaw, and sprinkle with sliced avocado and a drizzle of Greek yogurt or sour cream.
