Meal-Prep Tofu & Bell Pepper Stir-Fry

Ingredients

  • 14 oz firm tofu
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 2 pieces garlic cloves
  • 1 inch fresh ginger
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tbsp water
  • cooked rice (optional)

Instructions

  1. 1.Press the tofu to remove excess moisture by wrapping it in a clean towel and placing a heavy object on top for 10 minutes.
  2. 2.While the tofu presses, slice the bell peppers into thin strips and mince the garlic and ginger.
  3. 3.Cut the pressed tofu into 1-inch cubes.
  4. 4.Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  5. 5.Add the tofu cubes and cook, turning occasionally, until all sides are golden brown, about 7-8 minutes. Remove tofu and set aside.
  6. 6.In the same skillet, add the remaining 1 tablespoon vegetable oil.
  7. 7.Add minced garlic and grated ginger; sauté for 1 minute until fragrant.
  8. 8.Add the sliced bell peppers and stir-fry for 4-5 minutes until slightly tender but still crisp.
