A simple and efficient one-bowl recipe for marinated chicken souvlaki served in warm pita pockets with a fresh cucumber-yogurt sauce and crisp veggies. Perfect for easy meal prep with repeat ingredients and batch cooking.
.In a large mixing bowl, combine chicken breast pieces, olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well to coat all the chicken evenly. Cover and marinate in the fridge for at least 20 minutes.
.While chicken marinates, prepare the cucumber-yogurt sauce by combining Greek yogurt, finely diced cucumber, minced garlic, lemon juice, and a pinch of salt in a small bowl. Mix well and refrigerate until ready to serve.
.Preheat a grill pan or skillet over medium-high heat. Cook the marinated chicken pieces for about 5-7 minutes per side until fully cooked and slightly charred around the edges.
.Warm pita breads briefly in the oven or on the skillet.
.To assemble, spread a generous spoonful of cucumber-yogurt sauce inside each pita. Add cooked chicken pieces, sliced cherry tomatoes, thinly sliced red onion, and torn romaine lettuce.
.Serve immediately or divide into meal prep containers for up to 4 days, keeping sauce separate until ready to eat.
