BBQ Chicken Bowls with Bell Pepper

Ingredients

  • 1.5 pounds chicken breast
  • 0.75 cup BBQ sauce
  • 3 medium bell peppers
  • 1.5 cups uncooked rice
  • 1 tablespoon olive oil

Instructions

  1. 1.Preheat oven to 400°F (200°C).
  2. 2.In a bowl, mix chicken breasts with 1/2 cup BBQ sauce and let marinate for 10 minutes.
  3. 3.Cook 1.5 cups of uncooked rice according to package instructions.
  4. 4.While the rice cooks, slice bell peppers into strips.
  5. 5.Heat 1 tablespoon olive oil in a large skillet over medium heat. Add bell peppers and sauté for 5-7 minutes until tender. Remove and set aside.
  6. 6.Place marinated chicken breasts on a baking sheet and bake for 20-25 minutes or until cooked through.
  7. 7.Once chicken is cooked, let it rest for 5 minutes and then slice into strips.
  8. 8.Divide cooked rice evenly among 4 meal prep containers, top with sautéed bell peppers and sliced BBQ chicken. Drizzle remaining BBQ sauce over the bowls if desired.
